Hospitality declares a climate emergency
Declare
The future histories of hospitality. A movement for the doers: chefs, baristas, operators and owners.
The Future Histories of Hospitality
Hospitality is a fundamental part of our lives, and a powerful force for positive change.
As custodians of this industry, we have a responsibility to evolve in ways that support both people and the planet. At HospoDECLARE, we believe sustainability isn't just the right thing to do. It's a smart business move. Reducing waste, switching to renewables, and building circular systems don't just cut emissions. They strengthen our resilience, lower operational costs, and future-proof our venues. When we act collectively, the benefits multiply.
We are setting new standards for the next era.
The future starts NOW!

Why declare?
Hospitality is a fundamental part of our lives.
The hospitality industry is under pressure like never before, grappling with soaring operational costs, shifting consumer expectations, and growing demands for sustainability. With hospitality responsible for a third of Australia's annual food waste, contributing significantly to packaging-related emissions, and consuming around 14% of all commercial sector energy, there's an urgent need for collective action across our power sources, energy efficiency, waste systems, and supply chains. The supply chain alone can account for up to 70–80% of a venue's total carbon footprint, highlighting just how crucial upstream decisions are.
Imagine a world where every meal served, every room booked, and every event hosted contributes to a healthier planet and a more sustainable bottom line. That's the future we're creating, one where sustainability is embedded in every decision, and the industry thrives because of it.
Join us in shaping a stronger, greener hospitality sector. When we serve our guests, we serve the planet and secure our future.

What Makes HospoDECLARE Different?
While many Declare movements, like those in architecture, design, and construction, focus on big-picture, capital-intensive sustainability decisions made at key moments in a project's life cycle, HospoDECLARE operates closer to the grindstone. Hospitality is fast, dynamic, and deeply operational.
Our impact (and opportunity) lies in the thousands of decisions made daily. From how kitchens manage energy and waste to the sourcing of ingredients and the packaging handed across a counter.
HospoDECLARE is about practical, operational sustainability. Solutions that can be embedded in day-to-day service, not just in long-term infrastructure. It empowers everyday businesses, cafes, pubs, venues, hotels, to make meaningful changes that are visible, replicable, and scalable.
We're not waiting on million-dollar upgrades or policy shifts. We're building momentum from the ground up.
This is a movement for the doers. The chefs, baristas, operators, and owners who know that real sustainability happens not just in design studios or boardrooms, but on the floor, in the back-of-house, and in every service cycle.
As a part of HospoDECLARE we seek to:
